So I whine and cry to get the Nikon D 40 and what do I do when I get one? I bake stuff... lame.

Here is what I've been making for V-day (p.s. I hate v-day and I hate hallmark for creating v-day in the attempt to make more money)

Co-workers love baked goods...

Apple Turnovers:
Recipe I swiped from mom.


2 medium tart apples (I prefer Granny Smith), chopped into 1/2" cubes
1/3 cup water
1/3 cup packed light brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon all-purpose flour
1 teaspoon granulated sugar
1 tablespoon butter or margarine
2 cups all-purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
3/4 cup shortening (I much prefer organic)
5 tablespoons ice water

For the glaze:
1/2 cup powdered sugar
1 tablespoon milk or soy milk
1/4 teaspoon vanilla


Preheat the oven to 425 degrees F.
Combine apples and water in a medium saucepan over high heat. Cook, stirring frequently, until mixture comes to a boil. Reduce heat and simmer for 5 minutes. Stir in brown sugar, cinnamon, and nutmeg. Simmer for 5 more minutes. Combine 1 tablespoon flour and 1 teaspoon sugar and stir this into the apple mixture. Bring to a boil and boil for 1 minute. Remove from heat and stir in butter or margarine.
For the pastry, combine the 2 cups flour, 2 teaspoons sugar, and salt in a medium bowl. Cut in the shortening using a pastry blender or 2 knives until all the flour is blended to form pea-sized chunks. Sprinkle the ice water in one tablespoon at a time, tossing lightly with a fork until dough forms.
Flour a surface. Divide the dough in half. Roll each half into about a 1/8" thickness. Use a butter tub-sized lid as a pattern. Cut about 6 circles from each half with a sharp knife. Place 1 tablespoon of apple filling on each dough circle. Moisten edges with water and fold in half over filling. Press with a fork all around to seal.
Place turnovers on baking sheet. Prick the tops a few times with the prongs of a fork. Bake 15-20 minutes, or until golden. Cool 10 minutes.

For glaze: Combine powdered sugar, milk, and vanilla in a small bowl. Stir well. Spread over the warm turnovers.

I’m grossly board with myself. I’m going to be 23 next week (on Tuesday for anyone that wants to bake me a cake) and I’ve never been so uninspired in my whole life.

I don’t know if I need a new tattoo (Thinking of getting the Boy Scout crest on my foot) but don’t think that will “fix” my uninspired problem.
I don’t know if I need a new piercing, but I have no idea what to get that won’t finally give my work a good reason to fire me on the spot
I don’t know if I need a new hair cut (can’t, ok I won’t go shorter as I’m growing my hair out to be very mermaid like)
I don’t know if I need to throw out all my clothing and just buy all new stuff and change my look completely
I don’t know if I just need new bed sheets

I need some inspiration that I can handle.

I need to stop taking on so many too ambitious projects so I stop getting disappointed when they are not accomplished. Like that climb Mount. Everest in the winter ambition. That was too ambitious as I hate hiking long distance in the cold.

Perhaps I need to poke one eye out. That would be a nice change : )

Work e-mail has been down for a day and a half now and I can’t do any work. I really dislike the fact that my job is so e-mail based right now….

Please don’t leave me hanging.

Give me some advise please oh please god

I think the traveling all the time has finally caught up to me and has made me ill. I couldn't feel sicker then I do today. I've been sick since Sunday, no eating no playing, no fun...

Halloween is almost here and I can't wait to get dressed up and hit the bars. I really wish my neighborhood got more kids but I guess the houses are too far apart so the candy to walking ratio does not add up.

I think the traveling all the time has finally caught up to me and has made me ill.

Over the weekend before I got sick Steve-o and I went to 3 different beaches and attempted to fly kites and build sand castles. Then we had a Maine adventure aka. went to Renny's and didn't find anything good.

I'm ready to start feeling better.

I feel like I just got back home in Maine and now I'm on the road again!

Spent the weekend at the rents house (always nice to go home for some fresh eggs and laughs)

Got back to work yesterday and I leave tonoght for Boston again.

P.S. I was in Boston all last week. This is just insaine!

It seems like my hair is working against me as of late. Every time I want the fucker to grow it just hangs out in this freaking ridicules lifeless form on my head and refuses to grow or style. I almost cut it last night when I had a 5 minute tantrum fit in the bathroom (tantrum fits always make me feel better)lucky Steve took the scissors away and put them some place way out of reach i.e on top of the fridge, like I can't see them there. I just want long mermaid hair.

For a while I had been thinking about small food -- as in "Look at me, I am a GIANT!" small food. My plans included Brussels sprouts, little dinner rolls, and itty bitty pies. I have a small muffin pan with shallow, curved shapes that I thought would be good for the shape (the standard 5" small pie tin was considered but voted too large). I also tried some mini pies in regular muffin tins.

I used the standard refrigerated Pillsbury pie crusts, and cut out round shapes using a biscuit cutter and some cups from around the kitchen. I winged some apple and blueberry pie filling based on some basic recipes -- I didn't measure anything just threw in a little bit of sugar, a tiny bit of lemon zest, and a dash of cinnamon (when I decide to wing it things rarely work out, but this time they did) Today for lunch I'm enjoying my look at me I'm a giant person eating a ridiculously small pie.

Life has become too freakin complicated.

My computer was broken so I took it to the computer hospital and the guy erased all my music and pics, pretty sure he's going to leave work today without a left nut - damn him.

So beautiful here this time of year its summer here for the most part, and of course we have the hotel on the beach and of course the hotel and beach are crowded with yelling Fench men and women. Im kicking myself for fogetting my bathing suit.

What is a girl to do though? oh yes the hotel driver will take me shopping down town where it is soooo lovly.

I miss home just a little but not really, everyone is so happy and free going here unlike in the states where everyone is grumpy and pissed because winter is on the way.

They drink so much here and its great as they should because its so fucking hot here. Just sitting and typing here I feel like I've lost 5 pounds just from sweating.

Tonight I being taken to dinner by Anthony (the big wig from Athens Alfa-Beta food stores, we own him) he's so wonderful, smartest man I've ever ment, nothing but class.

He's planning a surprise helocopter tour for me next week, he's not very good at keeping surprises. He secretly told my co worker that he loves me like a daughter (they are wicked spoiled here) and he wishes I could stay forever.

My hotel room is wonderful as always, I have a huge belcony that leads to the beach and to the hotels private 3 pools. One giant one inside, a salt water one out side and a regular pool outside next to that one. There is a spa here that I have 24 hour access to as well.

Looks like I'll be taken care of this week. My parents are truly missing out as they were suppost to come on this trip with me and are not : (

Gotta go eat something very good for lunch and then get drivin around Athens by scooter.

Going to Greece next week for god knows how long its going to be. Our learning team is being restructored at work so it looks like the whole team will all be located in Brussels, since I'm one of 2 and the only under 40 still working here in the USA it looks as though I moving in a few years! Maybe I can have a dog there.

Got an eye doc appoint today cause its all fed-up again, doc says he might have to peel the top layer off? You got to be kidding...

I'm off to find out.
